This is not a stereotype...?

Me and my boyfriend work at rivalry japanese steakhouse restaurants. Ones takeya ones tokyo i haven't done any research but the mojority at both places seem to be vietnamese. How come these vietnamese come to america and open up japanese restaurants. Why not just call them vietnamese am I stupid or|||Because, for some reason Americans seem to like Chinese and Japanese the most when it comes to the Asian countries they know.|||Marketing
