Can I store Japanese sauce base (for Oyakodon or Katsudon) in the fridge?

OK.. I think this is a very technical Japanese kitchen specific question!! I cook Japanese donburi everyday.. sometimes even several times a day! I was wondering if it is ok to pre-mix the sauce (dashi, sugar, soy, mirin/sake) and store it in a a large jar in the fridge until ready to use..?





Would it lose the dashi soup flavor? After how long?





Would it go bad?? After how long?





Thanx :)|||What you should do is bring your ingredients to a boil first then put it in a clean jar with a good lid. Heating the sauce first will lock the flavor in right as it is. If you just combine the ingredients, the yeast in both the soy and sake will feed on the sugar causing a "bloom".


The taste will change, bitter and salty is what you will get with no hint of the dashi at all.


Let the sauce cool in the jar in the refrigerator. The sauce will be good for 2 weeks but dont worry cause you will more likely use it all in a week.|||As long as you keep the mix in an air-tight container, it should keep fine in the fridge. I'd use it within a week, just for safety reasons, but it should keep its flavor without any problem.
