Shitake Dashi

Ingredients

8 Dried shitake mushrooms

4 c. Cold water

4 Quarter-sized slices fresh ginger root

2 t Soy sauce

2 t Sake or dry sherry (optional)

Preparation

Combine all of the ingredients in a medium pot and bring them to a boil. Lower the heat and simmer, covered, for 15 minutes. Turn off the heat and allow the mushrooms to soak for an additional 15 minutes. Remove the Ginger slices from the dashi and discard them. Store the shitake and the dashi separately if not using immediately.

How to dry mushrooms perfectly.

Try using the following method you can dry 1 kilo of

fresh mushrooms in 12 hours.

This method preserves the mushrooms using no heat or

chemicals and is by far the best method.

All you need is a fan and a container to hold the

mushrooms. The container needs to be a basket

of some sort. That way the air from the fan

goes through the mushrooms and basket and takes some

moisture with it.

Instructions.

Place mushrooms in basket and place basket on some

newspaper. Place fan 6 inches from mushrooms and fix

in position directly above them. Put fan on full

speed and wait. Your mushrooms will dry perfectly. How can Shiitake be dried?
