What can i replace the dashi with for the takoyaki ?

You can make a pseudo dashi using dried shitake mushrooms and simmering slowly for about an hour then covering tightly and letting it steep for a few hours 'til tepid then straining through a fine mesh or metal coffee filter. Don't use a paper filter because the paper will absorb a lot of flavor.What can i replace the dashi with for the takoyaki ?
you can crush up some oshi beans and mix them with some good old fashion theelpmeim sauce. If you want some extra tang get some anasian powder and put all three together. that works nicely.
