Can i make miso soup with no dashi ?

I have the dashi granules but they contain msg so i don't want to use them. %26amp; i have no clue where to buy bonito flakes to make a homemade dashi. would the miso be tasteless if there were no dashi

You could but it won't taste as good. It won't be 'tasteless' though because the miso paste itself has a lot of flavor.



If its available, you could also use seaweed such as wakame or konbu to make your dashi. If that is also unavailable, you could try making a broth from a mild white fish, snapper, cod, etc. or even by using shrimp shells boiled for a few minutes. As a last resort, you could use vegetable broth for a little more flavor.



The real dashi tastes much better than those granules anyway. If you do manage to find a store selling bonito flakes (katsuobushi) see if they also sell konbu. Konbu is a type of seaweed that is also used to flavor authentic Japanese dashi. You might try looking or asking in your local healthfood store. Even if they don't carry the items you want, the people working there are probably very knowledgeable about the needs of people with special dietary requirements and may know where you can get them. I know that many people are averse to MSG but, I will say that if you don't for sure know that you can't tolerate MSG then you probably won't have any problem. True MSG intolerance is pretty rare. Most people are simply averse to it because of its bad publicity. In fact, miso paste itself is very high in glutamates, so is soy sauce and I believe seaweed also contains various glutamates. I'm not sure but I think that commercial MSG might even be derived from miso or some other fermented product that is very similar to miso.Can i make miso soup with no dashi ?
You can buy bonito flakes or dashi at any east/west or asian store. You may even be able to find it at stop %26amp; shop. They have quite a few asian items.



To be hones, if you made the soup without dashi and served it to an asian, they would know but if it's just for you or some friends, I would worry about.



You can cube up some tofu, add wakame, mushrooms or even some rice to cover up not having dashi.
