Can I make dashi stock out of roasted seaweed?

The Asian stores i found only had roasted seaweed. can i make the stock from that..?Can I make dashi stock out of roasted seaweed?
No, you should use konbu seaweed for your stock.

Yep. Make it from fresh kelp (konbu) too. That's what MSG/Ajinomoto is based on, a key flavour in Asian cuisine.



Note that the West has many anti-MSG people. They know not what they speak of. Personally I'll have my MSG thanks! It's like salt. Lots of salt is bad for you too. That's why you don't use lots. A little is great. It's healthy and tastes superb. Common sense.
