What can you substitute in tamagoyaki for mirin and dashi stock?

I want to try this recipe so i was wondering if u could substitute dashi stock wit a different kind and i know u can substiture mirin with sugar but does anyone have any other recipes to make itWhat can you substitute in tamagoyaki for mirin and dashi stock?
You can try fish stock for the dashi (mushroom stock if vegetarian), but the mirin... not easily substituted for with just sugar - even sugar and sake won't match it very well.

Plum wine perhaps?

Dashi is not difficult to make ( http://japanesefood.about.com/od/soup/a/鈥?/a> ), and mirin -in my area at least - can be found in any supermarket; I'd first make an effort to find stores that stock mirin., before trying substitutes.
