Can I substitute textured vegetable protein for vital wheat gluten? The textured vegetable protein is gluten-free- the vital wheat gluten is obviously not, so I know the texture would be different.|||The TVP is higher in protein then the vital wheat gluten. TVP is more like hamburger, while vital wheat gluten is more like ham in texture. They use VWG in the comercial fake burgers to help hold them together.|||it depends, if you are trying to make seitan, then no|||The answer to your question is yes you can.

Gluten, Vital Wheat is the natural protein found in wheat. It contains 75% protein. A small amount added to yeast bread recipes improves the texture and elasticity of the dough. This is often used by commercial bakeries to produce light textured breads, and can easily put the home bread baker on a par with the professionals.
